
Eat Something Green Each Day (keep reading – the goal is only 1 per day)!
I know you have heard this before but it’s important enough to not give up on. The important thing is to increase your awareness for the color green and aim for even just one serving per day (to start!). Raw and leafy is ideal – but remember that everything counts! Here are a few suggestions to help get you started:
- Sprinkle dried parsley flakes (or dried nettles!) on almost anything
- Throw a handful of spinach (fresh or frozen!) into your breakfast smoothie
- Splurge on pre-washed salad greens (I love the new ‘baby kale’) and add to everything: put a handful in the bottom of your soup bowl (the heat from the soup will wilt them), toss lightly with olive oil and use on sandwiches, or add to breakfast burritos
- Puree any leafy green (spinach, kale or chard) with chicken stock and add as a base to chunky soups
- Keep a container of sprouts (broccoli, alfalfa, or daikon) in your fridge and use them like you would lettuce – my favorites: broccoli sprouts sprinkled with a bit of season salt with scrambled eggs or a Wasa crisp with avocado and daikon sprouts- yum! Sprouts are very concentrated sources of beneficial enzymes. For example, myrosinase – a potent cancer fighter – is found in broccoli and broccoli sprouts. And daikon sprouts, just like the root, is beneficial for your liver. And best of all – no prep required!
Doable, right? I think you’ll surprise yourself.
